For an easy and healthy summer side dish, use this delicious recipe for corn and vegetable summer salad.
To make it, you’ll need:
- 1 tablespoon of canola oil
- 1 minced garlic clove
- 4 chopped green onions
- 1 cup of sliced fresh okra
- 1 jalapeno, seeded and finely chopped
- 1 chopped red bell pepper
- 2 ears of fresh corn kernels cut off the cob
- 1 15-ounce can of rinsed and drained black beans
- 1/3 cup of chopped cilantro
In a large nonstick skillet, heat the oil over medium-high. Add the garlic and onions to the skillet and sauté for one minute. Stir in the okra and sauté for three minutes. Turn the heat down for medium, then add in the jalapeno and bell pepper and cook for five minutes. Stir in the corn and cook for five more minutes.
Add in the beans and cook for two minutes, then stir in the cilantro and salt and pepper to taste. Serve warm or chilled and enjoy!
