Spring Recipe For Spring Salad

For The Dressing

- 1 tablespoon of sugar
- 2 tablespoons of red wine vinegar

- 2 tablespoons of extra-virgin olive oil
For The Salad
- 4 cups of arugula
- 4 cups of romaine lettuce, torn
- 1/3 cup of red onion, sliced
- 2 cups of strawberries, quartered
- 12 ounces of skinless, boneless rotisserie chicken breast, sliced
- 2 tablespoons of unsalted cashews, halved
- ½ cup of blue cheese, crumbled
To make the dressing, combine the water, sugar, vinegar, and salt and pepper in a small bowl. While whisking vigorously, drizzle in the olive oil until all is combined.
In a large bowl, toss the arugula and romaine with the red onion, strawberries, and chicken. Divide the salad into four bowls, top with the cashews and blue cheese, and drizzle with the salad dressing.
